Ingredients

  • 1/2 cup tahini
  • 1/2 cup plain Greek yogurt
  • 1 garlic clove, minced (or 1/4 tsp garlic powder)
  • 2 tbsp lemon juice
  • 2-4 tbsp water, to thin
  • Salt to taste

How to assemble

  1. Whisk tahini and lemon juice together first โ€” it will seize up and thicken, that's normal.
  2. Stir in the Greek yogurt and garlic until smooth.
  3. Add water a tablespoon at a time until it reaches a drizzle-able consistency.
  4. Season with salt, taste, and adjust lemon or garlic to preference.
  5. Store in a sealed jar in the fridge for up to a week.

One sauce, made once, that upgrades a whole week of meal-prep bowls, wraps, and combo meals โ€” this is what turns a plain container of protein and rice into something you actually look forward to eating. The Greek yogurt cuts the richness of the tahini and adds protein without watering down the flavor.

Tips

  • Make it thinner for a salad dressing, thicker for a wrap spread โ€” the water amount is the only variable.
  • Doesn't freeze well (the tahini and yogurt separate), but a week of fridge life is usually enough to use it up.
  • Great on the Avocado Egg Pita, the Chicken & Rice Power Bowl, or plain roasted vegetables.
  • Swap lemon for lime and add a pinch of cumin for a different flavor direction without changing the base ratio.
